Pulses are great sources of protein – don’t underestimate even the humble baked bean! Cheesy beans in a jacket is not only delicious and nutritious, it feels ‘normal’. I put a little curry or chili powder in mine, sometimes a bit of marmite just to make it taste ‘meatier’. Minced Quorn is my absolute go-to for protein. It is so versatile and easy to digest and doesn’t feel ‘fake’. The frozen packs are ideal as you only need to use the amount you need at any one time if you are cooking for just yourself. Quorn chili with cous cous is just about as packed with protein as a steak!!
